Creamy avocado pesto - healthy, easy & vegan
When I posted a picture of my homemade avocado pesto sauce, I got a ton of messages asking for the recipe. So here it is.

What you need (for two people):
2 ripe avocados
100g of broccoli
half a lemon
one tsp. of salt
one tbsp. of brown sugar (or 2 dates)
100g of fresh basil
1 tbsp. of coconut oil
1 tsp. of tahin
a few cashews
topping: nutritional yeast & sunflower seeds
What to do:
Basically all you need to do, is blend the avocados, raw broccoli,, basil, tahin, coconut oil and cashews. Then squeeze in the juice of half a lemon for a fresh, juicy taste. Time for a taste test. Add sugar and salt to your liking. If you don’t like sugar, dates are an easy substitute for that.
Boil your favorite pasta, put the sauce on top and decorate with loads of nutritional yeast (for cheesy texture and taste) as well as some sunflower seeds for some crunch.
