Delicious and filling vegan curry

When I posted this story on instagram, I got about 100 private messages asking for the recipe.

What you will need (for 2 people):

  • 1 cup of rice

  • 1 cup of quinoa

  • half a cup of broccoli

  • half a cup of red pepper

  • 3 big potatos

  • curry and kurkuma powder (1 tbsp each)

  • coconut oil

  • salt, pepper, cinnamon (1 tsp.), chilli (half a tsp.) powder

  • 4 dates

  • 1 banana

  • 1 tin of tomatos

  • a hand full of pumpkin seeds

What to do:

Start by boiling the potatoes until soft. Then boil the rice and quinoa in a separate pot and fry with some coconut oil and water in a big pan. Add the chopped broccoli and pepper to soften the veggies. While everything is cooking, start by making the sauce. For that, mix the cooked potatoes, a bit of water, dates, banana, kurkuma, curry, cinnamon, salt and pepper, as well as the tin of tomatoes. Blend until a smooth creamy sauce is created. The water in your frying pan should have evaporated by now. Time to add the sauce, fry for a bit longer until everything is mixed well.

Feel free to top everything with a few pumpkin seeds.

And now: time to eat.
