Make him like veggie food: Protein bomb


This is part of a little series in which i try to convince my boyfriend that vegan food isn't all that bad after all. He is the biggest meateater ever and i think a lot of guys are the same. Especially active men think that they NEED meat in their life to gain muscle and be satisfied. But that is simply not true.




The most dominant ingredient for this recipe is barley. Did you know that barely has so many superpowers? The benefits are mostly attributed to the eight essential amino acids which it contains, meaning that it represents the complete protein requirement in our diet. Recent research says that consuming whole grain barley also regulates blood sugar to a great extent.
Barley, being an excellent source of fiber, also keeps your body toxin-free. The phosphorus and copper content in barley grass guarantees an overall health of bones. If you have osteoporosis, it can be your natural remedy. So basically it is an overall super nutritious ingredient. 


What you need (for 1 portion):

  • 1 cup of barley
  • 1 zuchini
  • 1 carrot
  • 100g of sellery
  • some parsley
  • 2 tbsp. tomato paste
  • 1 tbsp. curry powder
  • salt and pepper
  • coconut oil
  • vegan cream 

How to do it:

It is so simple. Just bake all the veggies with some coconut oil, salt and pepper in the oven at 180degree for about 20minutes until nice and crispy. While waiting for the veggies boil your barley in a pot. I like cooking my barley like I cook rice (so one cup of barley and two cups of rice). When the water is nearly completely evaporated add in your curry powder and vegan cream, as well as the tomato paste to create some creamy mediterranen flavor. Once the veggies are ready, serve everything on one big plate and garnish with some parsley. 

This literally takes not longer than 25min and is also a great dish for leftover day :)
