Make him like veggie food: Baked pasta

How to make him enjoy the veggie lifestyle...

I want to start this little series, because of a vegan month I did with my boyfriend. He is the biggest meateater ever and i think a lot of guys are the same. Especially active men think that they NEED meat in their life to gain muscle and be satisfied. But that is simply not true.
I want to share some recipes, that my boyfriend loooooves. And they are totally vegan.

Today I have a nice pasta dish for you, that you can eat 2 days in a row by just switching the recipe up a little.

What you will need:

  • Pasta
  • vegan cream
  • 5 tomatos
  • 1 big onion
  • 4 big carrots
  • half a cup of shredded almonds 
  • coconut oil
  • 1 cup of kidney beans
  • half a cup of chickpeas
  • a bit of lettuce (and your favorite dressing)
  • 1 big zuchini
  • some sweet chili sauce
  • herbs and spices of your choice (I recommend chili, paprica spice and curry)

For the original recipe you just need to boil your pasta and then place it in a casserole dish that has been coated in some coconut oil. Then add your cut carrots, onion and tomatos. (You can obviously also add other veggies that you may have) Then you add your vegan cream and your favorite spices and top the whole thing of with some shredded almonds for some nice crunch at the top. Leave it in the oven at 180 degree for about half an hour and then serve it with a nice side of lettuce. 

On the next day you can reheat the leftovers by just frying them in a pan with some coconut oil. They will get super crispy and tasty. Then you can arrange it in a bowl together with some spiralized zuchini and carrot. Top it with some sweet chili sauce and you have a quick and easy lunch dish.
