Vegan belgian waffles.






Everyone loves waffles. What if I tell you that there is a quite healthy way to make them?






What you need:

1 1/2 cup whole wheat pastry flour
1 Tbsp baking powder
1/2 tsp salt
3 Tbsp vanilla sugar
5 Tbsp coconut oil
2 Tbsp ground flax seed
5 Tbsp water
1 1/2 cups coconut milk
A blender (I can recommend my vitamix)

What to do:

Preheat your waffle iron. Combine the flax seed and water in a small bowl, set aside. Mix the flour, baking powder, coconut milk, salt, & sugar in a medium sized bowl. Melt the coconut oil in another medium bowl. Slowly combine both bowls and  keep stirring. Last but not least add the flax-mixture. Cook the waffles until nicely golden brown. 

(These waffles will have a vanilla-coconut flavour. If you don't like either of the two, you can just switch it into sunflower-oil or dairy-free butter and almond milk.)
